Pumpkin season only comes around once a year, so you have to make as many goodies as you can out of it. Why not go over the top with decadence? This layered cake is pumpkin chocolate chip with a pumpkin, cinnamon, and cream cheese frosting. There is really nothing else to say except copy down this recipe and make it asap. It is pretty rich, though, so this is an eating event to take on with a buddy or two. For the recipe jump on over to Phoenix New Times Chow Bella Blog: Chocolate Chip Pumpkin Layer Cake .

It is beginning to look a lot like fall – can you feel it in the air? Soon enough we will be able to turn our ovens on and bake and there is nothing thriftier then making your own bread. It really is inexpensive and is not hard at all. This is a perfect Sunday afternoon project and it will yield four loaves so you will have bread for an entire week. Well that is if you don’t slather it with butter right out of the oven and eat an entire loaf on the spot. For the recipe, how to and tips jump on over to my piece at the Phoenix New Times Chow Bella: Homemade Classic French Bread.

This is a chocolate espresso cake that I made for the Tall Ones Birthday. It also had espresso flavored frosting and I colored the fondant coffee tan. I cut the fondant shapes on my Cricut Cake using the From My Kitchen cartridge. I also rolled small balls from the fondant and then smashed them down in the center with a tooth-pick to make little fake coffee beans.

For my sisters birthday I created a campfire / marshmallow roast cake. Camping and eating marshmallows are two of her very favorite things. I had the dilemma in front of me that I had to create a cake to serve 50 people, the party was off site, not at a home and had to be transported by car for a 45 minute drive. So while it isn’t as pretty I made a sheet cake and just left the cake in the pan to decorate and this worked out really well. This cake was a lot of fun to make. I created the fire logs and roasting twigs out of brown fondant and cut them on my Cricut Cake. I piped on the orange flames (butter cream frosting) and then cut mini-marshmallows in half and attached them on top of the branches with a little bit of butter cream frosting. I won’t revel her age but this isn’t the first nor the last time that we’ll but a 2 candle and a 9 candle on her cake.

I will be writing a weekly piece at the Phoenix New Times Chow Bella here is the tag line:  Every week, artist, writer and cook Cyndi Coon will bring you an idea for making the most of what you’ve already got in the pantry or the fridge. Ladies and gentlemen, we introduce the Thrifty Cook.

This week the Thrifty Cook (that’s me) offers a blueberry crisp recipe to use up the five pound box of blueberries I bought on a whim at Costco. Head over to the Phoenix New Times Chow Bella Site to read all about it: click here.
